Bread. Cheese. Garlic. Butter. <– Four out of the five best things known to man all stuffed inside one recipe. The last one is chocolate, incase you’re wondering 😉

I have confession to make. I think I’ve eaten almost half of this loaf of pull apart garlic bread — all by myself. It’s so inappropriate that while I’m thinking about it being so inappropriate, I’m also thinking about maybe sneaking another bite at the same time.

Golden brown, toasty bread stuffed with pockets of oozing mozzarella. The garlic butter melts into the crevices and the top has a big sprinkle of fresh herbs for some color. All I need is a boat of marinara sauce on the side to dip this in. I’m going to dare you to NOT eat this straight from the oven.

Cheesy garlic pull apart bread is the perfect interactive appetizer or centerpiece to a cheese board situation. Trust me, it’s a welcome sight if you’re serving pizza or pasta. You could even serve minestrone soup as a side dish with this bread to dip. How amazing does that sound?

Let me cure your midweek blues, all you need is a little pull apart garlic bread in your life.

Ingredients for cheesy pull-apart garlic bread:

  • Garlic Cloves:You’ll want a handful of garlic cloves that are mince dup for this recipe.
  • Fresh Parsley:We’ll add a handful of fresh parsley to the food processor when we’re making the garlic butter.
  • Olive Oil:the olive oil goes into the butter mixture to help thin it out a bit.
  • Bread:I like to use store-bought sourdough bread or a country loaf for this. But you could certainly make a batch of my no knead bread dough, bake it and use that for this recipe instead.
  • Unsalted Butter:You can use both salted and unsalted butter for this recipe. Just be sure to cut back on the salt if you use salted butter.
  • Kosher salt:we’ll add a pinch of salt to the garlic bread butter. If you’re using salted butter, use less salt in the recipe.
  • Deli-Sliced Mozzarella:I like to use deli-sliced mozzarella instead of shredded mozzarella cheese for this recipe. Though either will work, the deli slices are much easier to cut into small squares and pop into the grid batter of the loaf of bread. It definitely cuts down on the prep time this with way too!

How to make pull-apart cheesy garlic bread

  1. Make the garlic butter. In the bowl of a food processor, combine the garlic, parsley, and olive oil until it breaks down into small pieces.
  2. Make the garlic butter.Melt the butter in a small saucepan over medium heat. Once melted, stir the chopped garlic mixture into the butter, along with ½ teaspoon.salt. Cook the butter until it’s fragrant but don’t allow the garlic to brown.
  3. Load it up.Using a sharp serrated knife, make 1-inch cuts in the bread. Then turn the loaf and make cuts the other way. Drizzle or brush the loaf with the prepared garlic butter. Then stack the mozzarella cheese slices and generously stuff them into the pockets. You an also sprinkle some parmesan cheese over the bread if you’d like. Place the garlic bread on a sheet of aluminum foil and fold up the sides. Use a second piece to cover the top.
  4. Bake or store. At this point you can bake the pull apart garlic bread in a preheated oven until the garlic bread toasts and the cheese melts. You can also pop this into the refrigerator and bake later. Serve while it’s still warm; the flavor is incredible!

Cheesy garlic pull apart bread that's stuffed with fresh mozzarella, minced garlic, butter, and parsley. This is such a fun, edible centerpiece that would be great to serve when you're entertaining!

Ingredients

  • 5 cloves garlic
  • 1/3 cup parsley
  • 2 tablespoons olive oil
  • 1 small loaf country or sour dough bread
  • 3 tablespoons butter
  • salt to taste
  • 4 ounces deli sliced mozzarella cheese (or shredded)

Instructions

  1. Combine the garlic cloves, parsley, and olive oil in a small food processor until the garlic breaks down into small pieces. If you're using sliced mozzarella, stack the cheese slices and cut into 1 inch squares.
  2. Heat the butter over medium heat in a small saucepan. When the butter melts, add the chopped garlic to the butter along with a pinch of salt and allow the mixture to cook for 2 minutes, stirring as necessary so the garlic does not brown. Remove from heat.
  3. Position a rack in the center of the oven and preheat the oven to 375ºF. Using a sharp serrated knife, make 1 inch diagonal cuts across the loaf of bread making sure you don't cut the bread all the way through. Use a spoon to drizzle the garlic butter into the the cuts of the bread. Stack 3-4 cheese squares and place them in the cuts. Place the garlic bread on a sheet of foil and fold up the sides. Use a second piece to cover the top (we'll be removing this later). Allow the bread to bake for 10 minutes. Remove the top piece of foil and allow the bread to bake for another 10 minutes or until the cheese melts completely. Serve warm.

This was really delish and a big hit at my party. I substituted chives for the parsley because that’s what I had on hand, but the recipe would stand without either. It’s more for color and presentation! I also used 2 cups of grated mozzarella. Just wonderful!
