Blueberry season might be over, but this juicy berry is something I crave all year long! Here are some of my favorite blueberry recipes that I'm fixing to make this weekend. And yes, these recipes are just as delicious whether they're canned, fresh, or frozen. Let’s roll up our sleeves and get baking!

1. Blueberry Galette with Cornmeal Thyme Crust

Even if you’re a beginner baker, galettes are essential foolproof and, therefore, guaranteed to turn out beautiful and delicious. This rustic tart will provide a much-appreciated departure from the norm.

Ingredients

Cornmeal Thyme Dough:

  • 1 cup plus 1 tablespoon all purpose four, plus more for rolling
  • 1/2 cup stoneground cornmeal
  • 1/2 teaspoon kosher salt
  • 1 stick unsalted butter, cubed
  • 1 heaping tablespoon fresh thyme leaves
  • 2- 3 tablespoons cold water

Blueberry Filling:

  • 1 pint blueberries, organic preferred
  • 3/4 cup sugar (we’re using cane sugar for this recipe)
  • 1 tablespoon lemon juice
  • Zest from 1 lemon
  • 1 egg + 1 tablespoon water, beaten

2. Blueberry Pie Egg Rolls

If you’ve ever frequented a Pick Up Stix and had their apple pie egg rolls, you know how absolutely heavenly a dessert egg roll is. So, imagine our surprise when we stumbled upon this recipe. Yeah, we pretty much keeled over with happiness and mouth watering anticipation.

Ingredients

  • 1 pkg egg roll wrappers (you’ll need about 12-16)
  • 1 (21 oz) can Lucky Leaf Premium Blueberry Pie Filling
  • About ⅓ cup white chocolate chips, optional
  • Cinnamon sugar (mix 1 tsp ground cinnamon into ½ cup white sugar)

Haven’t you ever heard that pies are basically just big cookies? Or was that cakes? Either way, you’re sure to love this recipe – regardless of whatever it is the mini-version of!

Ingredients

Blueberry Oatmeal Cookies:

  • 4 ounces unsalted butter, room temp
  • 1/2 cup light brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla bean paste (You can also use vanilla extract)
  • 3/4 cup AP flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 & 1/2 cups oats

  • 8 ounces mascarpone cheese

4. Blueberry Cream Cheese Pie

I can only speak from experience, and speaking from experience, I would have to say that this is, hands down, the best blueberry cream cheese pie recipe I’ve ever made.

Ingredients

For the Crust:

  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 2 tsp sugar
  • 3/4 cup cold butter, cut into 1/2-inch pieces
  • 4-7 tbsp ice water

For the Pie:

  • 8 oz reduced fat cream cheese
  • 1/2 cup low fat sour cream
  • 1/2 cup sugar
  • 2 eggs, divided
  • 1 tsp vanilla extract
  • zest of 1 lemon
  • pinch or two of salt
  • 3 cups blueberries, fresh or frozen (don’t thaw if using frozen)
  • 2 tbsp cornstarch
  • 1/4 cup sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp heavy cream or milk

5.Blueberry Pie Bites

The Homemade Recipes family is all for making miniature versions of favorite classics – I mean, the more bite-size the treat, the easier it is to carry with you everywhere, making your commute and bus ride not so bad after all.

  • 1 8oz package cream cheese
  • 1 stick unsalted butter
  • 1 egg

Ingredients

For the Dough:

  • 12 oz. (2-2/3 cups) unbleached all-purpose flour
  • 3 Tbs. granulated sugar
  • 1 tsp. table salt
  • 6 oz. (3/4 cup) cold unsalted butter, cut into 12 pieces
  • 2 oz. (4 Tbs.) frozen vegetable shortening, cut into 4 pieces
  • 5 Tbs. ice-cold water
  • 1 Tbs. fresh lemon juice

For the Filling:

  • 2/3 cup granulated sugar
  • 1-1/2 oz. (1/3 cup) unbleached all-purpose flour
  • 1 tsp. finely grated lemon zest plus 1 Tbs.
  • Juice (from 1 medium lemon)
  • Big pinch table salt
  • 6 cups (30 oz.) fresh blueberries, rinsed and thoroughly dried

For Assembly:

  • 1 large egg
  • 2 Tbs. coarse sugar, such as turbinado or white sanding sugar

7.Wild Blueberry Pie

This healthy recipe uses spelt and oat flour to make the pie crust and the intense saccharine, tanginess of wild blueberries to create a full-rounded spectrum of sweet flavor.

Ingredients

Pie Crust:

  • 2 dl plain flour
  • 1 dl rolled oats
  • 1 dl wholegrain spelt
  • 1 ½ ts salt
  • 350 g butter
  • 1 dl water (about)

  • Cheese from 3 litres of milk

Ingredients

For Cake:

  • ¾ cup canola oil
  • ¾ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 large egg
  • 2½ cups flour
  • 1 tsp baking soda
  • ½ tsp baking powder

  • ¼ cup sour cream
  • 1½ teaspoons vanilla extract
  • 2 Tbsp buttermilk
